PURPOSE: This program is designed to prepare students for initial employment as dietetic clerks.

PROGRAM CONTENT: Students must complete a core curriculum which includes:

                        Perform basic tasks in a dietary office

                        Food tray assembly

                        Basic nutrition knowledge

                        Personal hygiene and grooming

                        Principles of sanitation and safety

                        Menu/diet modification

                        Personal productivity

                        Participate in clinical experience

 

This program is an introduction to the dietetic career ladder. It is designed to train students to assist in various functions of food service related to patient care. It involves administering sound nutrition, therapeutic diets and nutritional supplements to patients.

ENTRANCE REQUIREMENTS: 16 years of age or older and not currently enrolled in another Miami-Dade County Public School; and Occupational Interest. No entrance exam is required.

LENGTH OF PROGRAM: The entire program is one trimester (approximately four months)

TIME: 8:00 a.m. – 2:00 p.m., M-F (Classroom and Clinical Hours) Approximately one-half of the program is spent in clinical learning experiences correlating theory instruction and kitchen skills.

UNIFORMS: Students are required to wear the official school uniform during the clinical setting.

TRANSPORTATION: Students must provide their own transportation to and from campus, as well as to all clinical settings.
